cleat eats | Jerk Style Salmon Jerky


We have a great little dehydrator that I love to use for everything. I picked it up a bit ago at Wal-Mart, for only $45. It's awesome, especially for prepping clean eating snacks that pack a punch of protein. This is my all-time favorite jerky recipe. Made with salmon, it’s full of omega 3 to 6, vitamin B6, B12 and more! This snack only packs around 66 calories per dried ounce. Now that’s some good snacking.

Ingredients
1-2 pounds of skinless salmon
2 tablespoons salt
24 packets Truvia
1 tablespoon minced garlic
1 teaspoon onion powder
1 teaspoon black pepper
1/4 teaspoon cayenne
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
4 cups water


Directions
In a medium sized sauce pan, bring all of the ingredients, except the salmon, to a simmer. Simmer until the salt is dissolved into the water. It really only takes a minute. Remove the brine from the heat and let it sit out a few hours, until it reaches room temp.


Cut the salmon into quarter to half inch strips. Place all the strips into the brine. Cover and refrigerate 8-10 hours.


Drain the salmon and pat dry on paper towels. Place in your dehydrator and run for 6 hours, or until the consistency you like.


If you don’t have a dehydrator, you can set your oven on the lowest setting it allows you to use. Dry the salmon out 6-8 hours, or to the consistency you prefer, flipping at least once during the dehydrating process.

That’s it! Enjoy… a sweet, spicy, fragrant and very Caribbean style salmon jerky.
