clean eats | Date Muesli


Not only is this an awesome clean eating recipe, it’s also a raw food recipe! I love to mix in raw foods whenever I can. Raw food diets have been around, increasing in popularity for years. Now there is a plethora of online recipes, and not to mention, the best raw food book I’ve ever found…

Raw, Quick & Delicious! Most recipes are quite time consuming with lots of soaking, dehydrating, etc… not with this book. There are over 175 super quick raw food recipes, all prepared with only 5 ingredients. It’s absolutely phenomenal! If you’re into raw food or clean eating, it’s an absolute must have. We're talking sides, desserts, meals, snacks... the whole raw food layout.

Ingredients
1/4 cup raw almonds
1/4 cup raw cashews
2 tablespoons raw pumpkin seeds
1 tablespoon raw sunflower seeds
1/4 cup chopped pitted dates
1/2 cup filtered water

Directions
In a food processor fitted with the metal blade, process the almonds, cashews, pumpkin seeds and sunflower seeds until roughly chopped. Add your dates and pulse 8 to 10 times, until just combined.

Transfer to a serving bowl and add water. That’s it! If you want to prep this ahead of time for eating later, don’t add the water. You can cover and refrigerate for up to 5 days, then add the water when you’re ready to eat.

Variations
You can also substitute the water for fresh nut milk. I personally love unsweetened almond milk. You can also top with a dollop of yogurt, a pinch of cinnamon and raw agave nectar. If you prefer raisin, replace the dates with ½ cup raisins soaked in warm water for 10 minutes.
