clean eats | Crock Pot Boiled Peanuts
These are my husband’s favorite, his sister too. I’ve watched both of them in complete amazement, as they tear through an entire batch of these bad boys. They’re really good and super good for you. They are full of dietary fiber, protein, calcium, vitamin B6, iron, magnesium… the list goes on…
Ingredients
1/4 cup salt
1 pound bag raw peanuts
Water
Directions
Fill your crock pot with water and dissolve in your salt. Toss in the bag of peanuts. Make sure you have raw peanuts. You can pick them up anywhere. I grab mine at Wal-Mart, or I find organic at Whole Foods, Hyvee, etc...
Cover and set on high for 6 hours. That's it! Voila...
My husband likes his super mushy… so I cook his on high twice, so for 12 hours total. It's not at all necessary, just the way he loves them. There you go! Awesome Virginia style boiled peanuts.
If you don’t have a crockpot...
Bring your water and salt to a boil with the peanuts inside of a large pot over stovetop. Cover and reduce heat to a simmer. Simmer for 3 hours.
Flavor Variations
Have fun with your flavors! My husband loves them with just salt, but you go Cajun style and add crab boil, jalapeno peppers, garlic powder, Cajun seasonings and red pepper flakes… go fun spiced with bay leaves, coriander, peppercorns, fennel seeds and paprika… toss in Old Bay Seasoning, tabasco, butter, onion… go fall style with brown sugar, nutmeg, cinnamon, butter and vanilla extract… get crazy and go Spanish style with some heat, paprika, bay leaves, garlic and cumin. Don’t be scared to play around!
