[recipe] Horseradish Crusted Salmon
This turned out amazing. I bought a huge jar of horseradish a few weeks ago to make Homemade Bloody Mary Mix, and was dying to do something foodie with it. I had a whole salmon fillet, too many crackers and some spices laying around and went to town. Everyone loved it…
Ingredients
Whole salmon fillet [approximately 1.75 pounds]
2 tablespoons fresh prepared horseradish
1/2 cup panko bread crumbs or ground saltine crackers
1 teaspoon dried parsley
3 tablespoons olive oil
1 teaspoon minced garlic
Salt and pepper to taste
Directions
Preheat oven to 400 degrees. Place salmon skin side down in a shallow baking pan, sprayed liberally with non-stick cooking spray. Season the salmon with salt and pepper to taste.
In a bowl, mix the horseradish, panko, parsley, garlic and olive oil. Spread over your salmon and bake for 25 minutes, or until flaky.
This is a really robust dish. The salmon is definitely the star. The best accompaniments I found to serve with it, are crusty bread, fresh butter and a salad with a mild vinaigrette. Enjoy!!
