{recipe} Apple Tart with Banana Honey Ice Cream
Oh yeah - it is amazing!! Not to mention super easy to make. I consider it a challenge on my creativity, to never waste food. I know that something amazing can always be created with seemingly insignificant ingredients.
The other day I was in the mood for something sweet. I took inventory of the things in my fridge and freezer. Banana's that had maybe a day before they were dead, a sheet of frozen puff pastry from my escargot recipe, tons of apples from the kids...it immediately hit me! An Apple Tart with Banana Honey ice cream.
Ice Cream Ingredients
2 overly ripe bananas
2 teaspoons honey
Tart Ingredients
2 sheets of frozen puff pastry, defrosted
2 baking apples
2 tablespoons melted butter
1/2 cup brown sugar
Heavy dash of salt
Dash of vanilla extract
Heavy dash powdered sugar
Ice Cream Directions - Step 1
Slice the bananas at least 4 hours before you are planning to use them, toss into a freezer bag and freeze thoroughly.
Tart Directions
Preheat your oven to 400 degrees. Core and thinly slice your apples. Toss the apple slices with the brown sugar, melted butter, vanilla and salt.
Unfold your defrosted puff pastry sheets. Cut each pastry sheet in half and lay the pieces on top of each other on a non-stick cooking sprayed baking pan. You should have two ready to pile on pastries.
Layer the apple slices down the middle of each pastry and bake in the preheated oven for 20 minutes, or until the pastry is puffed and golden brown. Keep an eye starting at 15 minutes.
When you pull the pastry out of the oven, let it cool for 10 minutes. Then sprinkle with a dash of powdered sugar.
Cut in slices and serve with a hefty dollop of banana honey ice cream.
Ice Cream Directions - Step 2
Take the frozen bananas, when you are ready for your ice cream, and toss them into a blender with the honey.
Keep working and grinding them for a few minutes until, VOILA! They turn into ice cream. Serve over slices of your tart.
