{recipe} Kansas City BBQ Bacon Shrimp



A new recipe that turned out AMAZING! I cook a lot of different dishes, but even we end up getting in ruts. I've been digging the shrimp lately. I can honestly say I haven't cooked with it in a decade or longer, before experimenting again this year. I fittingly named this recipe Kansas City BBQ Bacon Shrimp because it is basted with a twist on traditional Kansas City style BBQ sauce and wrapped in BACON! This dish is super simple, budget friendly and busy mom {or dad} friendly.

Ingredients
1 pound uncooked shrimp {21 to 25 count}
12 slices thin cut bacon
1/2 cup ketchup
2 tablespoons apple cider vinegar
1/4 cup brown sugar
1 tablespoon yellow mustard
1 tablespoon minced garlic
1/3 teaspoon cayenne pepper

Directions
Preheat oven to 400 degrees. Arrange the bacon on your roasting pan and bake in your preheated oven for 5 minutes, just to start the cooking process. While the bacon is cooking, get started on peeling and deveining the shrimp. When the bacon is done, remove and turn the oven up to 425 degrees. Take the bacon and cut all of it in half, so you have 24 half slices of half cooked bacon.


In a bowl, mix the ketchup, apple cider vinegar, brown sugar, yellow mustard, minced garlic and cayenne pepper.


Spray the roasting pan liberally with non stick cooking spray. Take each uncooked shrimp and wrap it in a bacon half, laying the bacon wrapped shrimp onto the roasting pan seam side down. Liberally baste each shrimp with a dollop of the homemade BBQ sauce mixture. Pop into the preheated oven and cook for 15 minutes. At the end of the 15 minutes, kick the oven on Hi Broil for 3 minutes to brown and caramelize the BBQ a bit more. Remove the bacon wrapped BBQ shrimp from the oven and serve. I simply served with a giant bacon Caesar salad.
