{recipe} Bacon Wrapped Swai


This is another perfect Valentine recipe for those of us who are planning to stay in and cook something special {to view my other Valentine dish, Stuffed Shrimp Scampi, click here}. It's very man friendly, men looooove bacon, it's crazy budget friendly and it is also female friendly because it is filling, but won't make you feel heavy at all. Swai is a rich white fish that I noticed in the seafood section beside the Tilapia a few months ago. It was half the price of Tilapia {only $10 for a 4 pound bag in comparison to $11 for a 2 pound bag of Tilapia}. I bought it instead and have been perfecting recipes with it since. What makes Swai so perfect for this dish, is that Swai has to be cooked nearly 2-3 times longer than any other white fish. The fish stays moist while the bacon cooks and crisps up to perfection.

Ingredients
2 swai fish fillets
1/4 teaspoon Italian herb blend
1/8 teaspoon black pepper
6 thin cut slices bacon

Roasting pan


Directions
Preheat oven to 400 degrees and spray your roasting pan liberally with nonstick cooking spray. Lightly dust the fish with the Italian herb seasoning blend. The blend I use is salt free and consisted of basil, parsley, oregano and garlic, only. You'll get just enough salt from the bacon. Then lightly pepper each fillet. Lay out 3 pieces of bacon, 1 inch apart, and so that the middle of each piece lands where you are going to be cooking the fish on the pan. Lay 1 fillet in the center of the bacon and wrap the bacon around the fillet so the gaps are closed up. Repeat the same process for the other fillet. Pop into your preheated oven for 30 minutes. Then, after the 30 minutes are up, kick the oven onto Broil Hi for 1-3 minutes, or until the bacon just starts to get a little more brown and crispy on top. Voila! I simply served with a vegetable side and a rice side.
