{recipe} Crazy Good Nachos

I make the world's best nachos! For years and years and years, I've played around creating nacho recipes and have a lot of variations. By far, this is my favorite creation. What I love most about them, besides the fact that they rock, is that they are filling and can be a complete meal. They are full of protein, good carbs, dairy and if served with some Pico de Gallo, and/or topped with lettuce, avocado, etc...they will also be full of good raw vegetables. This recipe is quick and easy: husbands and boyfriends will praise you, kids will think you're the best - you can single handedly cause peace and happiness house wide with this recipe.


Ingredients
1 package small size tortillas
1 can refried beans
1 large bag fiesta blend shredded cheese
1 jar jalapenos
Olive Oil
Salt {optional}


Directions
Preheat oven to 350 degrees. Brush both sides of 8 tortillas lightly with olive oil and quarter them so each tortilla makes 4 triangle cuts. 8 tortillas will make 32 chips: use more tortillas if you would like more, less if you don't want so many. Lay all the triangles onto a baking sheet and lightly salt {optional}. Bake in your preheated oven for 5-10 minutes. Check them often. They are done when they are just starting to barely turn golden brown.


Remove the chips from the oven and keep the oven on. Lightly coat each individual chip with a little bit of the refried beans, then top each one with a jalapeno pepper, and pile on a mound of cheese. Pop back into the oven for 3-6 minutes, or until the cheese has just melted. That's it! They are amazing served just the way they are, but you can also serve piled with lettuce, sour cream, guacamole -or- simply serve as is with dippers on the side, including Pico de Gallo and/or salsa.
