{recipe} Classic Meatloaf


This is my absolute favorite meatloaf recipe. I make a lot of varieties that range from the classic to the ultra refined. I know what you're already thinking: How can a meatloaf be refined? Well, in the meatloaf world, using high quality ground meats with portabella, feta, spinach and a white wine reduction certainly does it for me. This particular recipe is a slight twist on the classic. It is perfectly simple and I have yet to meet anyone that doesn't go back for seconds.

Ingredients
1.5 pounds ground beef
1 egg
1 small onion, minced
1/2 cup milk
1 cup bread crumbs
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon minced garlic
2 cups shredded cheddar cheese
2 slices bread
1/2 cup ketchup
2 tablespoons brown sugar
1 teaspoon balsamic vinegar


Directions
Preheat oven to 350 degrees. In a large bowl, mix together the beef, egg, onion, milk, bread crumbs, salt, pepper, garlic and cheese until well incorporated. Lightly grease a loaf pan and place 2 pieces of bread in the bottom, side by side to cover most of, or the entire bottom of the pan. Pile the meatloaf mixture onto the top of the bread and pack decently tight like you're making a giant burger. In a separate bowl, mix together the ketchup, brown sugar and balsamic vinegar. Pour the mixture evenly over the top of the meatloaf. Bake in the oven for 1 hour, or until the internal temp reaches 160 degrees. Slice and serve alongside your favorite veggies. Happy numming!
