how to - Crawfish Boil



Fun, FUN, fun! This is such a neat upgrade to the normal dinner sitting around in the house. With spring and summer coming up, you’ll want to give this a try. It’s a little messy, totally sociable and keeps everyone entertained for hours sometimes.

This is my recipe to serve 4 hefty servings. If you want to go large for a get together, double, triple, quadruple the recipe…go nuts. Even more fun, change around the veg adds. Have your guests bring their favorite veggies and make it a group effort. Super cool.

Ingredients
5 pounds of shell on crawfish
1/4 cup of your favorite Cajun seasonings
12 quart stock pot
About 36 cups water
8 short ears of corn
1 pound Andouille sausage
1 large onion
8 medium size potatoes


Directions
Fill your stock pot up about 2/3 of the way [approximately 36 cups water]. Bring to a boil with your Cajun seasonings. Toss in your Andouille, bring back to a simmer and simmer for 20 minutes.

While simmering, slice the onion up into chunks and cut the potatoes into large cubes. Throw them into your simmering water with the corn, bring back to a light boil and boil for 5 minutes.

Toss in your crawfish. Bring back to a boil and boil for 2 minutes. Turn the heat off, but leave the pot on the burner and let everything sit for 10 minutes. That’s it! Strain and serve!!

For a fun outdoor adventure, after straining, lay out a few layers of newspaper onto your outdoor table, put a bucket in the middle for shells and dump the entire meal right onto the newspaper. Throw in some cold beer/wine and you’ve got a good time.
