Italian Sausage Pineapple Kabobs

 
Kabobs Rock! >>> They make everything so simple. You throw on the main course and the veg side and POOF! Instant meal that, for some odd reason, is immediately more fun to eat. You can even get your kids to eat more adventurous things, just because it comes on a cool stick. Go figure.
 
This recipe is really easy and it’s so flavorful. I love pork with pineapple. The salt with the grilled juicy sweetness… it’s a winner.
 
Ingredients
1 pack mild Italian sausage links
1 whole pineapple


Directions
Start soaking your kabob sticks. After about an hour, preheat your grill.


Cut up the fresh pineapple. This is really easy to do. Just cut off both ends, then cut off the outside in about 6-8 large slices from top to bottom. Cut the pineapple center into 1/2 inch slices. Then cut cubes off the slices, discarding the hard middle circle.

 
Grill the sausage for 10-15 minutes, or until mostly done.

 
Remove the sausages from the grill and cut into bite sized chunks.


Start putting together your kabobs… pineapple, sausage, pineapple, sausage, pineapple… and so on. I like to fit as much fruit/veg on my kabobs as possible, so I always start and end with the healthy stuff [in this case, pineapple].

 
Place the finished kabobs back onto the grill.


Grill approximately 5 minutes on each side, or until the pineapple is nice and golden and the sausage is cooked through. Then serve!
