Herb Stuffed Grilled Whole Fish


This is such an awesome recipe for spring and summer. It’s beautiful, light, fragrant, effortlessly sophisticated, loaded with flavor - such an easy way to turn the normal fish dish into something that feels special.

Ingredients
4 whole white fish
4 sprigs rosemary
Bunch of cilantro
Small package basil
Zest and juice of 2 lemons
3 cloves minced garlic
3 tablespoons olive oil
Nonstick cooking spray
Salt and pepper to taste


Directions
Clean out your fish. If you’re not sure how to do this, check out my super old instructions from a million years ago {here}. Preheat the grill. Lay out 4 large pieces of aluminum foil on a large work surface and lightly spray with nonstick cooking spray. Lay 1 piece of fish on each piece of aluminum foil.


Drizzle a little olive oil in the center of the fish, salt and pepper and sprinkle in a little garlic. Then stuff each one with a quarter of the herbs. On the outside of the fish, rub down with the remaining olive oil and garlic. Sprinkle lemon zest on both sides, give a squeeze of lemon, then salt and pepper to taste.


Roll those bad boys up nice and tight in the aluminum foil.


Toss them on the grill.


Cook approximately 8-10 minutes on each side, turning only once, or until the fish is flaky and white. That’s it! Sooooooooooo easy. Serve over rice.
