Grilled Fish with Baby Kale


I’m a kale fanatic >>> it’s so good for you. Baby kale doesn’t even have a distinctive, overpowering taste. It’s similar to cooking with fresh spinach. It adds fiber, iron, vitamins, calcium and antioxidants to any meal, all while tasting fabulous, filling you up and helping to keep you full. And hey, all that fresh greenery always looks nice too. Looking good never hurt a thing.

Ingredients
5 large swai fillets, or other mild white fish
1 large package baby kale
2 cloves minced garlic
Zest and juice of 2 limes
Handful of fresh cilantro leaves
Pepper to taste


Directions
Preheat your grill. Lay out 5 large pieces of aluminum foil and lightly spray with non-stick cooking spray. Pile on each foil in order: large stack raw baby kale, 1 piece of fish, lightly pepper, sprinkle on a bit of garlic, the lime zest, a small squeeze of lime juice and a sprinkling of cilantro.

 
Repeat for all 5 foils.

 
Wrap them up tight and place them on your grill.


Grill approximately 15 minutes, or until the fish is firm, white and flaky. Serve over whole grain rice!
