clean eats | Pumpkin Pie


It has been such an insanely busy week! But I’ve still found plenty of time to bake, because this is the time of year when I can’t get enough of the Thanksgiving type baked goods. This is my quick and easy recipe for clean eating pumpkin pie. It’s really simple, only packs 114 calories per piece, and can be made into a full sized pie. For those directions, catch the end of this post!

For the Crust
6 tablespoons oatmeal
2 tablespoons of almond flour
1 packet of Truvia
2 teaspoons of coconut oil, melted
2 teaspoons of unsweetened plain almond milk
1/2 teaspoon ground cinnamon

For the Filling
1 cup prepared pumpkin
8 packets Truvia
3/4 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
3/4 cup almond milk
1 egg

Spray four 6 ounce ramekins with a touch of organic olive oil non-stick cooking spray. Preheat your oven to 300 degrees. In food processor, process the oats, flour and 1 packet of Truvia, until finely ground. It only takes a few seconds. You can also use a blender. That works perfect too. Then add the oil and milk. Pulse until the mixture forms wet crumbs.


Divide the oat crust mixture into your ramekins and press into the bottoms. Bake in the oven for 8 minutes.

Turn the oven up to 350 degrees. In a blender or food processor [you can also use a hand mixer and a bowl], puree the rest of the ingredients. So the other 8 packets of Truvia, the egg, cinnamon, ginger, cloves and almond milk.


Pour your batter into the ramekins over the crust and bake for 1 hour. Remove from the oven and allow to cool for one hour. After your hour is up, run a knife around the mini-pies to loosen them from the ramekins, pop those bad boys out and serve!


After they are completely room temp, store them in the fridge for up to a week. You can also pre-prep these, bake and store them in the freezer for a rainy day, so you have clean eating dessert waiting when you need it.


Full Sized Pie?
Easy! Just double the recipe, simple as that! And prepare it in a 9 inch pie pan. Each slice [1/8 of pie] will still only cost you 114 calories! Enjoy!
