clean eats | Dads Favorite Jerky
My husband is a beef jerky head. He loves the stuff… everything with spice. Red pepper flakes, black pepper, hot sauce, etc… I don’t like the stuff in the store because it’s full of quite a few things that don’t need to be in there. I especially dislike the ingredients that are testosterone inhibitors. When you make at home, you save a lot of $$ and you know hubby, kids, even you… are only eating what you want to be eating.
This is a fantastic, mistake proof recipe. It has a great, meaty undertone from the marinating process, plus the perfect touch of heat. It’s low in fat, high in protein. Really great recipe!
Ingredients
1.5 pounds low fat natural/organic beef cut
2/3 cup organic soy sauce
2/3 cup Worcestershire sauce
1 tablespoon honey
1 tablespoon black pepper
2 teaspoons onion powder
1 teaspoon red pepper flakes
Directions
Cut your meat super thin, around a 1/4 inch. It helps to freeze it for a bit first. You can pop it in the freezer about 3 hours, then slice. Mix together the soy sauce, Worcestershire, honey, 2 teaspoons of the black pepper and the onion powder. Put in your meat, cover and marinate overnight, or for around 12-24 hours.
In the morning, rinse your meat lightly under cold water. Pat dry with paper towels and place on your dehydrator trays. Sprinkle lightly with the red pepper flakes and the last teaspoon of black pepper. Dehydrate 4 hours, or until desired texture.
That’s it! Store in any air tight container for up to 3 weeks in the fridge… and enjoy!
If You Have to Use an Oven
Toss on a baking sheet and preheat your oven to the absolute lowest setting it will allow you to use. Dehydrate anywhere from 2-6 hours, flipping at least once during the process, or until desired texture.
