clean eats | Spanish Style Swai


I’m a clean eater. Basically, I eat super healthy Monday thru Friday, and the weekends is where I treat myself to all of my naughty recipes. This clean eats recipe turned out fantastic. It’s not just for clean eaters. It’s phenomenal for any family meal. It is flavorful, fragrant – it will absolutely make you feel like you are eating something naughty…

Ingredients
4 swai fillets [approximately 4 ounces a piece]
1 lime, juiced
2 cloves garlic, minced
Sprinkle of paprika
Sprinkle of onion powder
Sprinkle of ground cumin
Sprinkle of dried oregano
Sprinkle of crushed red pepper flakes
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Non-stick olive oil cooking spray


Directions
Preheat the oven to 350 degrees. Lightly spray a baking pan with non-stick cook spray and lay in your fish. Pour over the lime juice, then lightly spray the fish with non-stick cook spray. Sprinkle on the garlic, paprika, onion powder, cumin, oregano, red pepper flakes, salt and pepper.


Bake in the oven for 30 minutes. When you pull it out, spoon over some of the juices back onto the fish and top with the fresh cilantro. Voila! That’s it.


If creating a clean eat meal, serve with a 1/4 cup of Brown Spanish Rice [my easy recipe HERE] and 4 ounces of broiled tender crisp asparagus [HERE]. Awesome!
