{recipe} Apple and Walnut Citrus Stuffed Chicken


My famous chicken recipe. My absolute favorite. This is the simplest, no fail, always sure to please whole baked chicken dish. I made it up about 8 years ago when I did my usual - peeked in the fridge and thought, "What am I going to make with this tonight?" It's unique, special - I don't think there is anything else like it out there. It's sultry, rustic and refined. Give it a try. You won't be sorry.


Ingredients
1 whole 5-6 pound chicken
1 {5 oz} box whole wheat Stove Top Stuffing
1/2 cup chopped walnuts
5 tablespoons butter
1 and 1/3 cups water
1/2 cup white cooking wine
1 apple
1 lemon
3 stalks celery
1 orange
Salt to taste
Pepper to taste


Directions
Preheat oven to 350 degrees. Prep your chicken {rinse, pull out any extras, etc...}. Lightly salt and pepper the back side of the chicken and place it in a glass roasting pan sprayed with non stick cooking spray, breast side up. Lightly salt and pepper the breast side.


In a large bowl, pour the stuffing mix. Dice up the apple and roughly chop your walnuts. Add to the dry stuffing. In a smaller bowl, bring to a simmer in the microwave 1 and 1/3 cups water and 2 tablespoons of butter. Stir into the dry stuffing, apple and walnut mix. Let it sit for a moment while you...


Cut the lemon and orange into slices. Cut the celery into 1 inch pieces. Cut the remaining 3 tablespoons of butter into a few slices. Stuff the chicken with the apple walnut stuffing. Place around the chicken the orange, lemon, celery and butter - and pour in the white cooking wine. Place in preheated oven and bake for 2 and a 1/2 hours. Baste on occasion. About every 20 minutes. Voila! Perfection...
