{recipe} Garlic Butter Roasted Portabellas


I love cooking with baby portabellas. Even better - I love eating them! This is a super easy side dish that can be eaten alone, or can be used as an accompaniment for tons of other dishes. You can top on French baguette slices to use them like a rich gourmet bread topper, load on top of any steak, grilled chicken, you can even add escargot and eat as is, or serve the escargot garlic bellas over toasted garlic bread - the options are endless and this side practically makes itself.


Ingredients
1 pound of sliced baby portabellas
3 cloves of minced garlic
3 tablespoons butter
1 teaspoon fresh lemon juice
1/4 cup fresh chopped parsley
Light sprinkling of salt


Directions
Preheat your oven to 350 degrees. In a shallow glass baking dish {I use my handy glass deep dish pie pan}, combine the shrooms, garlic, lemon juice, parsley and salt. Give a good stir. Chop the butter into chunks and place on top of the mixture. 


Pop in the oven for 10 minutes, give a good stir, and cook for a final 10 minutes. VOILA!! All done...Oooooooooooh yes - it's good!
