{recipe} Candied Salmon


Once I learned the trick to chilling out the fishy flavor of salmon, I started cooking with it all the time. We eat it at least twice a month at home and I have dozens of recipes, but this is my fall back favorite. Any time I'm in a hurry, this recipe takes less than 5 minutes to prep and you have a stunning show dish 25 after that. Whether it's just for family, or you have guests - you'll always receive high marks for this little salmon gem.


Ingredients
Whole salmon fillet
1 cup packed brown sugar
3 tablespoons butter
Dash of salt


Directions
Preheat your oven to 400 degrees. Spray a glass baking pan with non stick cooking spray. Place the whole salmon fillet, skin side down, into the baking dish. Sprinkle lightly with salt, then sprinkle the brown sugar over the entire fillet. Place the dollops of butter on top and place in the oven to bake for 25 minutes.


Half way through the cooking time, use a spoon to baste some of the candied coating back on top of the salmon. It will be starting to lightly brown in the pan. This is the best part.  If you are using a glass pan, I swear it isn't starting to burn - it's just light brown candy {stomach rumbles}! Spoon it all back on the fish and bake the remaining amount of time.

When it's done, baste one final time, cut and serve - you can also place the whole fillet on a serving pan and garnish with little lemon pinwheels on the side and a couple of rosemary sprigs, just for adornment purposes. It creates a dazzling display.
