Easy Pancake Cereal
I'm not going to bore you to death with the history of pancakes and circles... lol! Let's just get into it man. These are the sh*t. You'll be surprised how many will go down. This recipe makes 6 huge bowls of pancake cereal which ends up being about 2-3 huge pancakes per bowl if they weren't miniature. Because they go down so sneaky and smooth, in minutes my kids will go through 3 bowls and will be running around tearing up the house and enjoying the day.
Eat with syrup or get fancy - add strawberry slices, fresh mint and whip cream. Add a scoop of vanilla ice cream with baked cinnamon apples. Add grilled peaches... there are no rules here and no end to the variations. Get creative!
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 tablespoon sugar
- 2 eggs
- 1 ½ to 2 cups milk
- 2 tablespoons melted and cooled butter
DIRECTIONS
- Heat a griddle or large skillet over HIGH-low heat. Yeah, that's a new one. You basically want your grill to be hot but on the highest low setting so these suckers aren't burning by the time you get around to piping all of them out.
- In a bowl, mix together all the ingredients and whisk a bit if it's super lumpy. Again, nothing fancy to be done here. They are pancakes; not a spaceship we're building to take to mars.
- Pour all the mix into a freezer bag and cut a little corner with your scissors so you can pipe these out quick and easy. Throw an extra teaspoon or 2 of butter, oil or cooking spray on your griddle or skillet and get to piping!
By the time you get around to all of them piped out, they'll most likely already be ready to flip. I just go through them fast as hell with a pair of chopsticks, then wait a couple more seconds and dump them into a bowl, add a spoon and some syrup and it's num num time!
I feed these to my husband, kids, the dog, our chinchillas and the chickens in the neighborhood. Good eats for all!
