{recipe} Veggie Croissant


This "recipe" is my all time favorite raw vegetarian sandwich. It is based on one I use to order all the time back in Virginia. The great thing about making them at home, is that instead of spending $7.00 on one from the deli, you can put together half a dozen for the same price.

Ingredients {single sandwich}
Few slices avocado
Few slices tomato
1 large roasted red bell pepper
1 teaspoon sunflower seeds {shelled, roasted, salted}
Honey Dijon dressing
Raw spinach leaves
1 slice provolone cheese
1 Croissant roll


Directions
You are simply going to cut open your croissant, sandwich style. Honey Dijon the bottom croissant half and start layering on all the vegetables, in any order you like. Top with your provolone cheese, or throw it in the middle like I did today. Honey Dijon the top half of the croissant and sprinkle your sunflower seeds into the Dijon so they stay put. That's it!

This sandwich is inexpensive, refreshing, filling, incredibly tasty, great for spring and summer - and best of all - it's loaded with more than 20 essential nutrients including , potassium, Vitamins A, B, C, E and K, folic acid and lycopene.
