{recipe} Spanish Style Pork Chops


My favorite hobby is cooking. I love to take a peek in my fridge, grab a dozen ingredients and throw them together. I do it pretty often and have come out with an amazing new dish each time. This following dish was thrown together earlier in the week and was inspired by traditional Spanish style pork dishes. It turned out to be very refreshing and really amazing. It's a great dish for any time of year and would easily be enjoyed by everyone - kids, picky eaters and all.

Ingredients
8-10 thick cut pork chops
1 large orange, peeled
3 limes, juiced
1/4 cup olive oil
1 teaspoon fresh garlic, minced
1/2 cup dried bread crumbs
1/4 teaspoon pepper
1 teaspoon salt
1/4 teaspoon cumin


Directions
Preheat oven to 350 degrees. Spray your glass baking pan with nonstick cooking spray. Lay out your pork chops. Sprinkle the bread crumbs evenly over the pork chops. In a blender, liquefy the orange, lime juice, olive oil, garlic, pepper, salt and cumin. Pour the mixture over all of the pork chops. Bake in your preheated oven for 1 hour.


I served alongside wholegrain yellow rice that was prepared with Bijol condiment seasoning and a lime and salt salad with tomato and avocado for an all around traditional Spanish style dish.
